so it’s all about cheese right now. The planning, the eating, the tasting, the comparing, the scariness of it all. The excitement of it all pregnant with possibilities. We’ve settled on a space and spend every non day job moment jotting down thoughts, tabulating numbers — will we have enough money, time, energy, knowledge, sense, and humor?
This is what I know. I love the idea of this. I wake up and know that I have to do this, and if not now, then when?
I get the cheese thing, precious rounds of goodness and cheese maker love. I want to respect their craft. It’s salt, milk and rennet. Let me say that again – Cheese = salt. rennet. milk. And from those three simple ingredients come thousands of varieties of cheese.
I’m tired of politics and the economy and the newspaper. I’ll discuss it, worry about it and read about it, but now I want to be centered in something honest and simple. Cheese.
